Congrats on your adoption! From your list I really like Ellery and Elan. The only one I really don't care for is Early-it just doesn't seem like a name to me.
Ellery means island with elder trees, though, which is not a bad meaning, but not an amazing one. Same goes with Elan, which means tree.
Are you looking for boy and girl names or just one or the other?

    meanings in parentheses
    Eben (stone of help)
    Elmer (noble and renowned)
Elihu (the Lord is my God)
Erling (son of the nobleman; prince)
    Emery (industrious)
    Ellis (benevolent)
    Eagan (fiery)
    Ewan (youth)
    Eagle (eagle)

    Everly (name derived from Ever)
    Elodie (marsh flower)
    Eden (place of delight)
    Ellis (benevolent)
    Emery (industrious)
Eliana (either "sun" or "God has answered")
    Eva (life)
Elara (from Greek myth-a lover of Zeus)
Elena (bright one)/the LOTR version Elenna means starwards

Of your choices, I think Elan is my favorite--it makes me think of "esprit and élan" just as the NB description mentions. (That said, it is a bit close to Ellen.) I like Early, too; seems bright, happy, and vivacious (though I imagine he might get ribbed a little extra when he's late, haha). Ellery and Ever feel pretty trendy and trendily feminine to me, and I would personally associate Enver with Envy and Ellard with other girl names and "lard." I would suggest:

    Eamon - fortunate protector
Eban or Eben - rock, stone of help
Eero - eternal ruler (related to Eric)
Elm - a strong, sturdy, rooted nature name (since you like word name Early)
Emrys - immortal one (has the softer sound of Ellery and Ever, but is rooted in history and lore, decidedly masculine, and outside the Top 1000)
Evander - good man (got some of the Ever and Enver sounds)
Ewan/Euan, Evan, Eoin (prn Owen) - born of the yew tree (evokes strength, health, longevity to me) or the Lord is gracious
    Enzo - estate ruler
    Esmond - grateful protection
