    I like unexpected nicknames as well.

    Ones I like I don't think have been mentioned yet:

    Victoria > Ria - I know too many Vickys, and Tor/Tori just isn't usable over here because of the Tory Party, but Ria is cute and different.
    Jackson/Harrison etc > Sonny - I've always thought Sonny quite a cute nickname on a boy, and it works perfectly for -son names.
    Caroline > Callie - Maybe this isn't that unexpected, but all the Carolines I've known have gone by the full name or Carrie/Caro, so to me it's pretty unexpected.

    My favorite is Renna for Catherine. So much better than Wren or Kate/Katie. I suppose it could be Rinna too.

    I've heard Coco for Colleen, which definitely changed the feel of what I think of as a pretty stodgy 50s/60s name.

    We call our Violet, "Vio" and have never heard of anyone else using this as a nn. It suits her much better than Vi or Lottie.
