I'm not really a fan of two middle names, I think it's usually very unnecessary. But there are cases when I think it's okay.
Of your options here's what I think:
The middle name Castle, it's unique but not weird.
Emory Sullivan Reid- I like all of these names, but not to together.
Ivory Harbor Apollo- I don't like this. The names seem all over the place.
Gideon Ezekiel August- I like Gideon Ezekiel, it's very biblical. I think August doesn't fit here.
Hugo Eleazar Tate- I like Tate a lot!

I like two MN combos, though they are harder to get the flow right.
Madison Gerard Castle - Madison on a boy is risque these days, but I'd love to see it happen! not digging Castle though
Emory Sullivan Reid - love it!
Ivory Harbor Apollo - this one needs some balancing out, all three names are so offbeat that it's a bit much all together - Emory Harbor Apollo would work better, for example... but I'm also not loving Ivory for a boy
Gideon Ezekiel August - I wouldn't expect this one in the same sibset as the first 3, but great combo! I think I'd slightly prefer Gideon August Ezekiel, but great this way too
Hugo Eleazar Tate - aha, here's Gideon's brother - great balance of Biblical and non there, it's edgy but not over the top

I am also not a big fan of two middle names, they can feel like such a mouthful, especially after including the surname. I do think these all flow well. My favorites (in order); Emory Sullivan Reid, Madison Gerard Castle, and Gideon Ezekiel August.
