From your suggestions, I prefer Caterina to Katarina, although I prefer Catharina over both of them. Sabrina and Karina are OK, although I'm not so sure on them. Here are some other names that have a -rina ending:

    Sarina
    Marina
    Audrina
    Brina
    Corrina
    Ekaterina
    Erina
    Gavrina
    Arina
    Petrina
    Katrina

Or you could go with just plain Rina.

They are really not my style, but I like Katarina the best.

Also... Alexandrina, Honorina, and Zepharina feel appealing.
(I would have added Marina and Corina both were previously mentioned).
