    Great name. I would go with Steffan.

    I think Stefan/Steffan is more likely to get the pronunciation you want in the U.S. For me, Stephen=Steven just because all the Stephen's I know say their names that way.

    I had a teacher called Steffan. He was Welsh (making the double 'f' necessary lest it be pronounced 'STEV-an'). I vastly prefer it to Stephen (stee-v'n).

    I don't particularly care for the name in any variation, but for pronunciation purposes, i think you should spell is Stefan. You may need to coach some people, but i think most of us have run into that one time or another.
