Evie - Really like this but too informal to go with the other names? - I really like it too. I don't think it is too informal, but I think a name not ending in "ee" would balance things out, What about Eve or Evelyn?
Isla - Not same style as other names? - I agree. Do you like Ailsa?
Iris - ? Yes!
Freya, Lila, Irene, Ella, Eloise, Louise, Lydia, India
Hamish - Not sure of the 2 x H names - Matches well, but I have never cared for Hamish and the terrible nn Hammy
Isaac - This is a favourite of ours, however too different in style?? - I love it!
Louis ? - If it is like Lewis not Louie, then this is great!
Lucas, Elias, Miles, Felix, Daniel, Jude, Rhys, Thomas

From your list I like Ruby, Henry, and Eve/Eva (nn Evie), Iris, Sadie, Louis, and Isaac. I agree that you don't have to use an -E ending, but you certainly can reach that by a nickname if you want to keep that ending.
Some other possibilities:
Ruby, Henry, and
Alfred (Alfie, Freddie)
Charles (nn Charlie)
Betsy (or Elizabeth with Betsy as a nn)
Dorothy (Dot, Dottie, Dorry)
Edith (nn Edie)
Ellen (nn Nell, Ellie)
Jane (nn Janie)

I think Louis goes great! It has two syllables and is classic, masculine and simple. It also fits well with Daniel. I was going to suggest Jack but then I remembered the middle name haha.
Personally, I think the girls names you have chosen are not as vintage sounding as Ruby. I think Alice would be so adorable!
