    I think Sarabeth is best if that's what you're going to call her/you don't want people to think Beth is her middle name. I can't imagine it being mispronounced at all, since they're both such classic names.

    I know a Sarabeth and she never had any issues with it. Visually, I like the look of Sarah Beth better though.

    I prefer Sarah Beth or Sarah Elizabeth. You can still call her Sarabeth. Best wishes!
