I've only seen Gwen and Gwyn- names before, so I would assume they are both legitimate (though I think "wyn" in this culture is masculine whereas "wen" is a feminine part of a name). I wouldn't use Gwin- in the name because as others have pointed out, it doesn't look "right."
So of the two options, I'd go for Violet Gwyndolyn.

I much prefer Violet Gwendolyn, but #2 would be Violet Gwyndolyn. Sorry for any repeats...
