I'm extremely biased, but I love George Samuel. However, in your case, I would use George Sidney. Sidney is the most direct way of honoring your son's great-grandfather, and the name is completely usable.

George Samuel is great, but I would rather choose George Sidney to honor baby's great-grandfather.

I like George a lot; I think it's an underused classic. I also adore Samuel.
