I think Colette is beautiful. I don't see it as dated but that's because I've never known one and have no associations for it.
Cosette is so sweet; I love it too, but it does seem more nicknamey, like a term of endearment.

Cosette used to be so rare. I knew a Cosette when I was a kid. She is older than I am, so I am guessing mid 40s now.
Now that they made Les Mis into a movie, the name won't be so rare.
I dislike the z in Cozette. The original is always better, in my opinion.
My vote is for Colette. I always go for names that are more vintage and less popular. It is one of my favorite "ette" name. Nicolette is great too, it isn't even the top 1000. Colette is. Cosette isn't, but I think that will change. Cosette seems a bit trendy to me, because of the movie.
