I'm a film student, and people always ask me if movies have stopped being "fun" for me, the answer to which is "of course not." The more I learn, the more I appreciate all the work that goes into them and the more I love them!
I have to second/third/fourth True Grit, Princess Bride and Pan's Labyrinth. Del Toro's similar Devil's Backbone/Espinazo del Diablo is also excellent.
I just watched Cloud Atlas the other night, and I have to say, it might be my new favorite. It's extremely complicated due to its vast scope, but that's what I love about it, and it's more than worth watching twice. The five minute long trailer alone is Oscar-worthy, in my opinion. Check it out.

Jane Eyre (2011)
St. Trinian's (hey, they can't all be highbrow and aesthetically valuable)
Beasts of the Southern Wild
Life is Beautiful (La Vita e Bella)
The Manchurian Candidate (the Frank Sinatra one, not the Denzel Washington remake)
Invasion of the Body Snatchers (also not the remake)
The Secret of Roan Inish
and Catherine Breillat's more abstract stuff, particularly La Belle Endormie.
I also adore movies that are so bad they're entertaining. I highly recommend Alien vs. Predator, Sand Sharks, and The Room.

The Decoy Bride
North & South (the Elizabeth Gaskell one, not the civil war one)
True Grit (i watched this for the first time today)
Stick It (Missy Peregrym's abs in that movie, amirite?)
Pretty much any superhero movie (i prefer x-men to the justice league, but i like them all)
While You Were Sleeping (le sigh. They don't make them like this anymore)
