    My go-to would be am-uh-RAN-thuh, 'am' as in 'ham', 'ran' as in 'he ran away'.

    not-so-guilty pleasures: five-syllable girls' names; virtue and nature names; over-the-top antique names for boys

    The Amaranthus (see here) is also the scientific name for the lovely flower Love-Lies-Bleeding. It also represents immortality. I've used Amaranthe before in a story years ago. I pronounce it Am-ah-ranth-ah, almost like Samantha. Amaranthe is pronounced the same way. I've also heard Amaranthia before.
