For Elsbeth is the English form of Elsebeth, which I associate with old ladies and started out as a nick name for Elizabeth. I'd go with Bethany, but I think it's your decision.

I realize Elsbeth is a real name, but whenever I say it, it sounds like a toddler who can't pronounce Elizabeth. I'd go with Bethany or your character's name could just be Beth.

Same here ! Elsbeth sounds more mature and less like some kind of medicine (I don't know why Bethany makes me think of that).

Bethany. Elsbeth sounds a little bit weird for my ears, I prefer Elspeth.
