Anina "Nina" - NMS prefer just Nina
Antonia "Toni" - Once again NMS
Bethany - I think it's sweet but a little dated, love the nn Beth
Coralie - Love it.
Eleanor "Elle" Love Eleanor (it's the name I use for myself online I love it so much) It's classic strong and pretty.
Elizabeth "Libby" - Like Eleanor it's strong, classic and pretty and the nn Libby gives a lively morden vibe. However it is quite popularif that sort of thing bothers you.
Gemma- I like it, put it kind of feels like it's missing something.
Genevieve "Evie" - Another love of mine. The nn Evie is so cute yet Genevieve is grown up without being to serious.
Giada "GiGi"- Giada is NMS and I loathe Gigi, it sound childish and ditzy, sorrry
Johanna "JoJo"- like it kind of cool and spunky.
Joy -NMS
Katherine "Kat" - Katherine another great classic name and the nn Kat is cute for when she's younger but not something I can picture of a grown woman.
Luana "LuLu" - NMS, I prefer Lucia (and other Lucy variants) to get the nn Lulu
Miriam "MiMi" - While not one of my favourite names it's classic and strong and the nn MiMi is cute.
Noella "Elle" NMS at all.
Phoebe - I like it. It can be girly and fun yet also grown up and serious.
Rita - Always makes me think of Rita Skeeter from Harry Potter.
Roxanna "Roxy" - Roxanne sounds kind of dated and Roxy reminds me to much of the brand.
Vienna "ViVi" - I'm not a big fan of place names but Vienna does have a nice sound I wouldn't use it unless there is personal significance to th place other wise I would suggest Vivienne nn ViVi
Virginia "Ginger" - the 'virgin' part kind of puts me off.
Winter- NMS at all, I wouldn't use it outside of the middle spot.
My favourites from the list are Eleanor, Elizabeth and Carolie.

Anina "Nina" - this is cool. I lluurve the NN Nina.
Antonia "Toni" - meh, not a fan. Could combine with above for Antonina NN Nina?
Bethany - I loved this name when I was little. It's OK
Coralie - beautiful

Giada "GiGi" - Not sure how to say this one, but in theory, I like it
Johanna "JoJo" - nah. it's dated and Jo is just...ek
Joy - OK. Nice as a middle, something like Katherine Joy or Elisabeth Joy would be nice
Katherine "Kat" - OK
Luana "LuLu" - nice. I know a Lowana (means girl in aboriginal australian I think) and a Lewanna. I like your spelling. Cute. Luella might be another option
Miriam "MiMi" OK. not my fave
Noella "Elle" - very cool. Love it.
Phoebe - very nice. cool.
Rita - nope
Roxanna "Roxy" - terrible. Sorry.
Vienna "ViVi" - nice as far as place names go. Probably not great in practice. Maybe a middle?
Virginia "Ginger" - would prefer just Ginger
Winter - I'm such a fan of this name, in the middle. I worry that it will be trendy though if that makes sense. Phoebe Winter is beyond cool.
Coralie, Eleanor, Phoebe and Winter are probably my favourites. Noella I haven't come across before and really like alsoLoving: Lilith Delphine, Daphne Elisabeth, Eleanor Lilac and my GP Amaryllis Clio

Fun list! Thoughts:
Anina "Nina"- Both names are sweet and pretty, but I prefer either as is, not Nina as nn for Anina.
Antonia "Toni"- The full name is one of the prettiest names on the planet IMO and I would never shorten such beauty.
Bethany- Pretty name on a list of much prettier ones.
Coralie- Lovely.
Eleanor "Elle"- You chose names that are just so pretty in long form, it's hard to shorten. But, Elle is a good one! I actually like some of the less expected names on your list.
Elizabeth "Libby"- Too many fresh beauties here to settle. Sorry.
Gemma- A personal fave!
Genevieve "Evie"- The long form is so fabulous and the onslaught of E- names and E- nn lessens Evie IMO.
Giada "GiGi" - Oh, now this I can see!
Johanna "JoJo"- One of my favorite names ever. Surprise, surprise- I prefer the long form!
Joy- I think this would be a fantastic mn for so many of your choices...
Katherine "Kat"- See Elizabeth...sorry. But I could go for Katerina, Katrin, or Katriel with Kat for nn!!!
Luana "LuLu"- Giada whips it.
Miriam "MiMi" - See Bethany.
Noella "Elle" - Ooh. Big Noella fan! But uhm same thoughts on E- nn.
Phoebe- See Bethany.
Rita- Unexpected but with names like Antonia and Giada in contention, I'd prefer Marguerite!
Roxanna "Roxy"- Sassy, prissy, but not in the same league.
Vienna "ViVi" - See Roxanna.
Virginia "Ginger"- I always get compliments on my name (Ginger). Maybe keep it on the list but others have more intrigue.
Winter - I love the name. It's always stayed high on my list along with names like Antonia and Johanna, but seeing it here, I realize it can't hold a candle...
I adore Antonia, Giada, Gemma, Noella, and Johanna and would keep Anina, Genevieve, Virginia, and Coralie on for now. I'd add Katriel. I'd suggest Sabina, Saskia, Laurentine, and Inga.

Best names from your list, IMO:
Antonia - Divine.
Bethany
Eleanor (Objectively I know it's really great. Subjectively, ick I find it frumpy, overly earnest)
Elizabeth (Though I think Bette "betty" is so far superior to Libby, which sounds a bit.. French poodle.)
Genevieve
Joy
Katherine... Only tolerating the K on account of Ms Hepburn.
Miriam
Phoebe
Rita
Roxana (Love love love. But please use the gorgeous original spelling- one N. This name is just delicious.)
Virginia (Love Ginger, usually dislike Virginia. Too... virginal.)
Winter - GP, but a good one. Teetering on the edge of trendy.

Favorites:
Coralie - Slowly but surely warming up to this name. It's very pretty and feminine.
Elizabeth - Classic of course, but prefer it as a middle name.
Joy - Not my favorite word name, but it's nice in the middle spot.
Genevieve - Love this beautiful name. Classic but still relevant.
Phoebe - Same feelings towards this name as with Coralie, although it has a tad more spunk!
Winter - I have a bit of a thing for nature names. Love Winter as a refreshing middle name!Luna ♥

Anina "Nina" - I love Nina but not Anina. I do like Yonina though.
Antonia "Toni" - Love both of these.
Bethany - I really REALLY dislike Bethany.
Coralie - Love
Eleanor "Elle" - Love Elle, but not Eleanor.
Elizabeth "Libby" - Love both of these.
Gemma - Like.
Genevieve "Evie" - Like Genevieve, not Evie.
Giada "GiGi" - NMS.
Johanna "JoJo" - Johanna's nice. JoJo reminds me of Jojo the Dog-Faced Boy. Would prefer Jo or Josie.
Joy - Dislike.
Katherine "Kat" - Would prefer either Katharine as in Katharine Hepburn, or Catherine NN Cat.
Luana "LuLu" - I find Lulu cloying and Luana hick-ish.
Miriam "MiMi" - Really like.
Noella "Elle" - I think Noelle would be prettier than Noella. I do like Elle though, and would prefer Noella to Eleanor.
Phoebe - Love.
Rita - Like, but prefer as a nickname to Rosarita or Sarita or something like that.
Roxanna "Roxy" - Love.
Vienna "ViVi" - Vivi is cute, but Vienna does nothing for me. I like Viviana/Vivienne/Viveca though.
Virginia "Ginger" - Nice.
Winter - Really like.
