Rose is the surname.
I think you're right-- something lacy, lots of vowel sounds, ending with an -a/-ie, will lilt and flow perfectly with consonant-rich Celeste & Rose. You want a 3-syllalbe name for perfect meter-- and, in an ideal world, the *second* syllable of the middle name will receive the stress. This will ensure that no two stressed syllables are adjacent to each other.
