There is always Marisol. It's not obvious, but the meaning is "sea and sun".
Plus it is a beautiful name.

I've named boys and girls named Sunny as a full name. Here's some names I think Sunny could work as a nickname for:
Asunta -- to ascend
Hasuna -- one who is well behaved
Sunari -- virtuous woman
Sundara -- beautiful
Sunila -- very blue
Sunita -- gracious
Suniva -- radiant
Sunna -- sun
Sunniva -- sun, gift
Addison
Alison
Ansonia -- son of Agnes
Carson
Cason
Crimson
Ellison
Emerson
Isono -- shore plain
Jamison
Madison
Reason
Sona -- gold

I think if you love Sunny then Sunny it is. You will get those people that will only call your child Sunday or Summer if it's that. NN are really hard. Some people just will not call your child that. Others will come up with their own NN for your child. My son's preschool teacher refused to call him his NN. Crazy!
I really like Susanna/Summer/Marisol/Sunday/Emerson(Emersyn) though! But I too love SUNNY!
