Coraline- cute and happy sounding. Great nn possibility. I love it.
Eleanor - becoming a bit too popular for my taste...(I know it's not that popular!)
Emmeline- Pretty but worried she will get washed away in a sea of Emmas and Emilys.
Esme - beautiful!
Evangeline- not a fan. Sounds too much like evangelical...or evangelist. I can't shake the association.
Ever- not a fan.
Fern- I like this name a lot but it doesn't have the elegance of your other names. Maybe you could use it as a middle name?
Juliet- Pretty as a middle name but to tied to Shakespeare for me to take that seriously as a first name...though it is pretty.
Snow- This could be a beautiful middle name, but I couldn't take it seriously as a first name. Sorry.
Verity- pretty but again not my style.

Coraline and Evangeline are my picks from your list. They are two that I would most definitely use myself!
If you like fairytale type names, you might like these:
Flora or Fleur
Juniper or Junia
Ginevra or Genève (very French) - nn Neve? Neve means snow

Wow, I have to start off by thanking everyone SO much for all the responses and suggestions! I love them all and I am humbled and overjoyed at the outpouring of help. Y'all rock! I wanted to reply to everyone when I first started writing back, but I knew I wouldn't be able to, so I hope everyone understands!!!!
I have to start off by saying that Ariella and Arielle were two of my favorite names ever... but Ariel was the name of my hubby's ex, so no go there D: And Rosalie is another dear favorite but my best friend has a Rose, so another no go! I also love Winter to death but again, it's been used in the family
From everyone's suggestions, I like:
Antonia (Really like this, Blake's middle name is Anthony!)
Arabella (They're so popular, but I LOVE off-beat -bella names!)
Clementine (I love this said Clem-en-teen, but I agree it would be hard to get!)
Emma (This is a name I love that I also feel is quite simple and elegant, but too popular?)
Everly (This is CUTE!)
Fay (Love for a middle name!!!)
Jesba - Ack, you know, I never thought about the alliteration of Juliet with our last name :-/ Sadly, it really does just sound like a jumbled mess, so I think I will have to knock her off the list. Drat! Same with Genevieve, sadly.
Taz - it's funny you congratulate me on a hubby who doesn't veto everything... cause sometimes I wish he just WOULD and help me narrow down my obsessive lists! Haha
Sillysheila - Marguerite Snow IS beautiful!!! Wow. Stunning I have a hard time shaking margaritas from my head when I say Marguerite, though, which is a horrible shame because the name is gorgeous :-/
Gabriela - I LOVE that idea, but I worked with a Cynthia for many years and I feel like the name is very closely tied to her now, even though I love the name :-/
Again, thank you all SO much for the help so far and I'm sorry I didn't reply to everyone, eek! Now I have no idea where to go from here, I eliminated one name but added SO many more! How do you know when the name is "the one?"

I love the idea of Snow in the middle! Juliet Snow, Esme Snow or Evangeline Snow are all gorgeous. Some more ideas:
Sadie (which means princess!)
LouisaGirls: Lucy, Nora, Ivy, Mae, Willow, Rose, Nessa
Boys: Felix, Philip, Owen, Flynn, Dexter, Henry, Rory, Finlay

I like Snow as a middle name (Or a first!) so I'll just use that as a middle name with the ones I like that also work with it as a middle.
Aurora Snow- It has a double princess and nature connection!
Names I really like that don't work as well with Snow as a middle name (and middle ideas):
Persephone Antonia (LOVE this with the nickname Percy)

I second Coralie, prefer that from Coraline.
From your list, I love Evangeline (but I think it is becoming too popular right now), Emmeline (Emme is very cute), Esme, Juliet (prefer Juliette), and Fern.
Ever I love but only as a nickname, what about Everleigh?
