Ok so Immy as the nickname and not Imogen. I'm all for interesting names, but I'm not sure how I'd like growing up as a "Monday" seeing as Monday is the dreaded start of the work week and the "case of the Mondays". Not great associations, but not the worst in the world.
Other ideas to consider as the long form of Immy:
Aimee
Cosima
Decima
Demetria
Immaculada
Imani
Imelda
Imperia
Jamie
Jessamine
Kimana / Kimani
Martimana
Massima
Maxima
Mimosa
Olimpia / Olympia
Primavera
Primevère
Primrose
Salima
Septima

Only ones I can think of are.
Esmerelda
Emerald
Jemima
I do think Immy for Monday is a bit of a stretch. But I think it's just fine to have a NN you love and use that really has nothing or very little to do with the name. I'm an Elizabeth and I'm a fan of all those stretchy NNs such as Izzy, Libby, Ellie, Zebby, Ebb, Bizzy, etc, so I say use Immy for Monday if you like it.
Also, gotta say, LOVE the idea of Immy for Simone!!! One of my MNs is Simone and I've thought of going by it. Will have to think about Immy. It's a fun NN! Simone has so many great NNs too. Immy, Simmy, Simo, Mona, Sime, Si.... My vote is for Simone!

I don't really like Monday as a name in general...I agree with the point teacherma made...associations like "a case of the Mondays," etc. Also the day-of-the-week name makes me think Wednesday Adams. I also have no idea how you could make Immy work as a nn.
Maybe you aren't open to this, but I didn't see anyone else suggest this so I thought I'd try...if you aren't in love with any of the Im- names people are suggesting, why not change Immy to Emmy? The sound is essentially the same, and that opens your options up to include all of the Em- names. Sure, some are uber-popular, but I'm sure it would be easy to find a hidden gem you could use.Girls: Filomena, Harper, Lavinia
Boys: Atticus, Leo, Roman
