My first idea was to try to pick a nickname for Ermintrude that you could use as a first or middle name. I think both Minnie and Trudy work, and they're cute. Minty would be a little quirkier, Tru or True a little more modern-sounding and streamlined, though I prefer True on a boy. True might also present teasing problems with the last name Noseworthy.
You could also use the full name, Ermintrude, as a middle name. I take it you're not in love with it as a first name!

I like Aurora's suggestion of picking a nickname for Ermintrude that you like. Maybe Emmie?
