My favorite is Adelaide Fiona. Adelaide Charlotte is nice too. The number of letters in Adelaide Charlotte with your last name does make it long. But syllable-wise it's 3-2-4, which has a nice flow.

With the exception of Coby (did you mean Colby?), I know babies with these names or people considering these names for their babies. So I don't think they are as unique as you think. They are nice...
