I don't think Beth is dated. It's a better nickname IMO than Liz/Lizzie.
Arietta is absolutely gorgeous. I don't like Elise, though.
I think it's beautiful! I've always loved french names.

I prefer Charlotte Olivia by a mile. Charlotte seems to fit better stylistically with Olivia.

If it makes you feel uncomfortable, then I wouldn't do it. I don't think that's a big deal though, personally. If you love it, what does it matter?
I like Ada Eller has too many vowels because of how AdA and Eller flow into each other, but Leo Eller sounds fine to me.
I actually think Scarlet suits her. Monroe and Dakota are both boys names to me. Scarlet is nice.

Aryanna is pretty bad.
I like Lola Sofia & Lola Natalia off of your list the best.
