I think you should use Clare because of St. Clare. Claire may be more common but, it really won't hurt her to just say how it's spelled when people ask.

I think Sawyer is pretty unisex. Though I prefer it for a boy.
I think Violet is classic. Use it if it really means that much to you.
I think Caris Elizabeth Gray is really pretty. I would also say it Care-iss. Having a sentimental middle name is always something special not weird.

I think that's up to you. Though, it might be easier if their identical to have separate clothes first. They also might be different sizes so they might need their own separate clothes.

My thought is trying to settle on a name that everyone likes the first time. Maybe you and your husband can make a list of 2 or 3 names that she could pick from if she doesn't like your choices above.
I like Bea and Trisha as nicknames for Beatrice.
This is my cousin's name and I call her Kaykay. To be fair I was 6 when she was born and it was quite a mouth full for me. Everyone else calls her Trina or Tari.
