I actually love Cory as a nickname for Cordelia.
Other ideas, not ending in -y, -r or -n, that have not yet been mentioned:
Or perhaps Bethan or Elisa with middle name Marie? Bethan might be perfect with your boys' names since it also ends in -n, but you could also call her Beth for short, which is distinctly feminine. Or...
How about Tessa Marie? Tessa is a variation of Therese. I think that Tessa would go nicely with your boys' names without sounding too similar.
Or Eilis Marie? Eilis is the Irish form of Elizabeth...
