To me, both Sparrow and Snow have too similar a sound to Elowen to pair really well. I didn't read every page, so sorry if this is a repeat, but my first thought was Elowen Winter.

Mattea (Ma TAY uh)
I love Adele or Claire with your other kids' names. :)
Both Amira and Amara have equal weight alongside Eliana, I think. Not too exotic or too simple. Lovely.
Would a Hebrew middle name work? Amara is amazing, with so many wonderful backgrounds and meanings, I love it too. Personally I would say use the one you love the most. Congratulations. :)

Samantha Caroline is my absolute favourite from that list!
Some really great suggestions already! I'd add

Watson. I love it. If there can be Winstons and Hudsons, why not some Watsons? Plus, Wats as a nn? Come ON. Awesome. I doubt I'd be brave enough to use it, but I really really wish I could.
