Why not put Ryker in the middle spot and find a first name that you both like (& that goes better with the last name)? Your fiancé could still call him Ryker.
Calvin! I know a lot of Calebs but I've never met a Calvin. I love that it reminds me of Calvin & Hobbes.
I like Vincent. I wouldn't use Victor since they both end in R, Arthur Victor is a little repetitive. Arthur Julian, Arthur Philip, Arthur Hugo, or Arthur Louis would be handsome too.
It's awfully similar to the word "grizzle" which can mean either old and grey or to complain a lot--so not a positive association. It also reminds me of Giselle, though, which I like.

Cavanaugh would be a cool middle name! I wouldn't worry about James being called Jay, but I prefer Alexander anyway since your last name is one syllable.

I wouldn't worry about Ezra Gabriel sounding religious if it has personal meaning for you. I prefer Ezra Grey, though.
