I love Ellis. I understand your difficulty with River (I love the name, but my last name is the actual name of a river...so I just can't). I like some of your middles better as firsts:

Schuyler is my favorite - with this spelling. We decided that would be our potential third son's name (not yet conceived lol), but my cousin just named his daughter Skylar so it's off the table :(
I'm not a Henry fan, and agree that if your husband is thinking of it as a cop-out it may not be the one.
I think Wes would be a great full first name, and see it as a sort of "toughened up"...

I have a similar issue with my ends-in-son LN, and I tend to avoid -son endings. Although my own FN ends in -on and doesn't sound that bad with my married name, IMO.
