Both choices are lovely, and have a classic feel. I don't think Eloise is especially unusual, though I do agree that Emily is extremely popular. If you're worried about Emilie/Emily's popularity,...
Adelaide Winifred is absolutely stunning. Wow! Congratulations.
My first thought with Jameson isn't whiskey, but instead a brand of vitamins (though it might be Jamieson with an "I" in it now that I think about it...). Anyway, that was my first thought.

With Isabel, Joanna and Lydia...
Stella Celeste is absolutely stunning. I like the S/C alliteration, and I don't think the similar meanings are problematic. "Star" and "Heavenly" are different enough.

I like Wyatt, but I much prefer Everett. It's so handsome, and I think it's lovely with Lucas.

Phoebe Maeve and Jude Michael
What about Leora or Leona? Leora is outside the top 1000, white Leona is just inside, in the 900's. And, both have the cool, boyish nn Leo!
I think previous posters have just about covered anything. I'd add:
Lee: Leander, Leo, Leon, Leopold, Leonardo
Lucille: even if you have a son, you could honour a Lucille with Lucas or...
B names are tricky...and there are lots of suggestions already, but I'll give it a try:
