I love the name Claire, and I think it would work great in the first name slot! Maybe Claire Alexandra or Claire Isabelle?
As for your other combos, I think that Sophia Claire would flow better...

I voted Catherine Rose McCabe. The long "a"s in Grace and McCabe sound a little harsh to my ear...not terrible, but I prefer the flow of Rose with your last name.

I love the name Emily :). I like Lucy as a sister for Emily, but Jessica feels dated to me. From your list, I also love Amelia, but Emily and Amelia are a little too similar in sound.
If you don't love any "G" names, don't force yourself to use one. I think Spencer Noah is great, and it sounds like it has lots of meaning for you!
