Beatrice "Birdie" Ann Margaux is gorgeous.
Such a lovely choice. I love to see Birdie as a nickname for Beatrice. It was our girl's choice last go around. :)
It's quite possible given the popularity of Vivian that some people will try to add the N. I don't think it would be an especially common occurrence or one that couldn't be gently corrected...
I find Vivia Evangeline to be a bit 'V' heavy. Vivia is gorgeous though!
My name crush of the moment is Alberta.
It was randomly generated on a baby name app of mine and I'm hooked. I really enjoy it's sound and the idea of Bertie/Birdie as a nickname along with Albie.

Margaret with the nickname Margo is delightful and so full of future nickname options if she should ever seek another! It sounds great with Harold.
I voted Bertrice for her middle. I love the...

I wondered about the connection to elephant, hippos, walruses, etc.
Margot is gorgeous.
Margot Penelope, Margot Cecilia, and Margot Daphne are my top three from your list.
Edit: With your surname, I'd go for something short and sweet. In this case that...
I'd choose Anthea personally. I love the nickname Annie.
What do you think of the name Ivory?
We've discussed it generally as a middle name and I was hoping to get your all's opinions.

Congratulations! You've picked wonderful names that I'm sure he'll grow to love. Zelda and Dashiell are marvelous together.
This, without a doubt. Juno Vittoria Sage is fantastic.
Otherwise the idea of you using your maiden name in the middle is nice. Juno Sage is really fun.
Our surname is two syllables so I'm feeling like a one syllable middle is well balanced.
We're not worried so much as seeking outside opinions and advice. :D
Our boy's with Bee list:
Any other opinions?
My first thought was Isidore.
Spiridon / Spyridon
Maybe Sid would make a nice middle name and you could call him that. Nathaniel Sid "Sid" as an...
