With a super-vintage and rare name like Appollina, I would go with a more familiar middle name. I would also use a middle name that starts and ends with a consonant sound, rather than another vowel....
Cora Rose would work, but I agree that the flow is not ideal. "Corn rows" does not strike me as an issue.

I vote, yes, for Eva and Maeve. The vowels sounds are all different. Maeve has an 'extra' consonant, and Eva has an 'extra' syllable. They are different enough for me.
The middle name, Wylie, is a definite improvement and makes a great bridge between the first and last names.

The flow is choppy, but it would not be a disaster. I think bonfireazalea had a great suggestion to use Shane Weston or Shane Wesley.
Jesse is ALL BOY to me. It's a great name with a long history. It would be a terrific choice!
