I'm a fan of Penina and Penna. Spencer is a good idea if you like surnames-as-girl-names.
I've always thought Imogen, while a bit of a stretch, is a great way to get to Minnie. Something about the sounds (Immy and -en) swoosh just fine into Minnie IMO.
