Leif - I really like this name a lot, but keep in mind that a lot of people will mispronounce it and misspell it.
Cillian - Not my favorite Irish name. I prefer Ciaran and a few others. But nothing really wrong with it either.
Scout - Great for a little boy or girl, not so great on a grown woman or man.
Sayer - I prefer Sawyer. Sayer makes me think of naysayer and yea-sayer. Or Slayer.
Sully - I really like Sully as a nickname for Sullivan, which is so handsome and rugged sounding. Sully as an actual first name is terrible. It literally means to soil or tarnish something.
Maverick - One of the better ones on your list. Still a little too "cool" for my tastes. It reminds me of the X-Men character Maverick.
Cormac - My favorite on your list. Handsome and substantial, but uncommon.
Copeland - Not my cup of tea.

Have you considered Oceanus? It was the name of the baby boy born on the Mayflower. I thought Everest was a good suggestion. What about Archer? Arrow, if you're daring. Titus is cool and masculine. Emmett is masculine but still very sweet. Kellan is a cool Irish name. My fav Irish name is Seamus, I think with Shane right behind it and a little more useable this side of the pond. What about:
